The blue agave is estate grown, organically certified and tested for peak sugar content individually before harvest. Sebatian Melendez goes to work and the first result of his magical process is 4 Copas Blanco.
Sweet aromas of powdered sugar dusted pineapple, dried apricot, honeycomb, and pistachio nougat follow through on a very soft and gentle entry to a light-to-medium body with roasted pepper and delicate spice accents. Finishes with a nice white pepper, anise cookie dough, and a citrusy minerality.
